Pasta “carbonara”

Ingredients

  • 80g kamut khorasan wholewheat pasta
  • 1 artichoke
  • 1 garlic clove
  • 1 egg
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon oregano and dried mint
  • Salt to taste
  • Grated ginger to taste (optional)

Method

  • Fill a pot with water, bring to boil, and cook the pasta according to the instruction on the package.
  • While waiting for the pasta to be ready, wash and finely slice the artichoke. Cook it in a pan, with garlic, oregano and mint, salt and oil to taste.
  • When the pasta is ready, drain and add it to the pan with the cooked artichoke. Add the beaten egg, pouring it over the pasta. On a high heat, stir the pasta in the sauce for 3 minutes and serve with a sprinkling of freshly grated ginger.
