Fill a pot with water, bring to boil, and cook the pasta according to the instruction on the package.
While waiting for the pasta to be ready, wash and finely slice the artichoke. Cook it in a pan, with garlic, oregano and mint, salt and oil to taste.
When the pasta is ready, drain and add it to the pan with the cooked artichoke. Add the beaten egg, pouring it over the pasta. On a high heat, stir the pasta in the sauce for 3 minutes and serve with a sprinkling of freshly grated ginger.
