1. Separate the egg york and egg white.
2. In a seperated bowl, combine the egg york, cottage cheese, flour, and xylitol and mix well.
3. Whisk the egg white until you see the small bubbles. Pour it into the mixture in step 2 and mix well.
4. Heat a pan over medium heat. It is easier if you use a small pan. Pour 4-5 tablespoons of the mixture onto the pan, and cook until bubbles appear on the surface. Flip the pancake and cook until light browned on the other side.
5. Put the pancakes on a plate, decorate with fruits and chocolates as you like.
