Chickpea flatbread and stewed chicory

Ingredients

  • 80g preferred bean flour
  • 200ml water
  • 1 tablespoon chopped walnuts or pistachios
  • 1/4 a leek
  • 100g fresh cabbage
  • 1 tablespoon rosemary
  • Extra virgin olive oil to taste
  • 1 piece of long chicory
  • Salt to taste

Method

  • Flatbread: mix the bean flour with water until you get a liquid batter and leave overnight. Washed and finely chopped the leek and cabbage, add them in the batter together with chopped walnuts or pistachios, salt, rosemary, and a table spoon of olive oil. Pour into a baking dish with parchment paper, drizzle with olive oil and then bake for 50 minutes at 180°C.
  • Stewed chicory: Wash the chicory and place it (still wet) in a baking dish in layers. Add oil and salt, and then bake it in the oven at 180°C until cooked. If there is place in the oven, it is possible to cook it beside the flatbread baking dish (two separate dishes).
