Rice with leek, egg, and ginger

80g of basmati brown rice
1 egg
1 medium-size leek
1 carrot
1 slice of fresh ginger
Some sprigs of parsley
2 teaspoons of extra virgin olive oil
Salt
Method
Slice the white part of the leek.
Chop the carrot and parsley into small pieces.
Put the leek, carrot, and parley in a saucepan and add the rice and water equal to double the volume of the rice.
Add the salt, bring to boil then lower the heat. Cook for about 20-25 minutes, until all the water is absorbed.
Add the egg, stirring for a minute. Allow to rest for 5 minutes. Serve with oil and the freshly grated ginger.
