Cream of pea soup

Ingredients
80g dried split green peas
1 tablespoon extra virgin olive oil
1 tablespoon lightly roasted sunflower seeds
1 tablespoon dehulled hemp seeds
1 sprig of parsley
1 table spoon of vegetable cooking cream
1/2 lemon
Method
Soak the dried peas for three hours, then cook them in plenty of boiling water for about 2 hours. At the last half hour, add salt to taste.
When the pea is ready, blend well.
Chop the parsley and sprinkle it on the creamy soup, together with the hemp and sunflower seeds, lemon juice and extra virgin olive oil.
