Pasta with tomatoes, pine nuts and olives

Ingredients

  • 80g whole wheat pasta
  • 6 medium-size cherry tomatoes
  • 100g black olives (or green olives according to your taste)
  • 1 teaspoon oregano
  • 1 tablespoon pine nuts
  • 1 small garlic clove
  • Salt and extra virgin olive oil to taste

Method

  • Fill a pot with water, bring to boil, and cook the pasta according to the instruction on the package.
  • While waiting for the pasta to be ready, wash and finely slice the tomatoes, softening them in a pan with garlic, oregano, salt and oil to taste.
  • Cut the olives into small pieces and add them to the tomatoes together with the pine nuts and stir well.
  • When the pasta is ready, drain and add it into the pan with the cherry tomatoes, stir on low heat for 3 minutes and serve with a sprinkling of freshly roasted breadcrumbs.
