100g black olives (or green olives according to your taste)
1 teaspoon oregano
1 tablespoon pine nuts
1 small garlic clove
Salt and extra virgin olive oil to taste
Method
Fill a pot with water, bring to boil, and cook the pasta according to the instruction on the package.
While waiting for the pasta to be ready, wash and finely slice the tomatoes, softening them in a pan with garlic, oregano, salt and oil to taste.
Cut the olives into small pieces and add them to the tomatoes together with the pine nuts and stir well.
When the pasta is ready, drain and add it into the pan with the cherry tomatoes, stir on low heat for 3 minutes and serve with a sprinkling of freshly roasted breadcrumbs.
