Pumpkin soup with quinoa

Ingredients

  • 50g of soy yogurt
  • 200g of pumpkin
  • 50g of quinoa
  • 1 onion
  • 1 teaspoon of extra virgin olive oil
  • 1 tablespoon of sesame paste (tahini)
  • Parsley
  • Basils
  • Salt

Method

  • Cook the quinoa in boiling water.
  • Wash the pumpkin well, cut it into slices (leaving washed pumpkin skin) and steam them.
  • Meanwhile, chop the onion, basil and parsley finely.
  • Once the pumpkin is cooked, put it in the blender, adding two glasses of cooking water (the water used to steam the pumpkin), the chopped onion, basil, parsley, yogurt and a pinch of salt. Blend well.
  • Add the quinoa and sesame paste to the cream and mix well. Pour the mixture onto a deep plate and decorate with basil leaves.
