Risotto with chicory and walnuts

Ingredients

  • 80g brown or basmati brown rice
  • 100g chicory
  • 1 clove of garlic
  • 5 walnuts
  • 1 tablespoon extra virgin olive oil
  • Salt to taste

Method

  • Whilst cooking the rice in boiling salted water.
  • Wash and finely chop the chicory and the walnuts.
  • In a pan, add the olive oil and garlic, stir then add the walnuts. When they become light brown, add the chicory, cover the pan with a lid and cook for 10 minutes.
  • When the rice is ready, add them into the pan and stir well. Serve hot.
