Salt, black peppers, and extra virgin olive oil to taste
Method
Fill a pot with water, bring to boil, and cook the rice according to the instruction on the package.
While waiting for the rice to be ready, wash the courgettes and soften them in a pan, with chopped onion, mint, salt and oil to taste.
Wash and steam the shrimp
When the rice is cooked, drain and pour it into the pan with the cooked courgette, add the shrimps and stir over a high heat for 3 minutes. Serve with a sprinkling of ground black pepper, if desired.
