Shrimp and courgette risotto

Ingredients

  • 80g wholemeal basmati rice
  • 70g shrimp
  • 1 large courgette
  • 1 small onion
  • 1 tablespoon mint
  • Salt, black peppers, and extra virgin olive oil to taste

Method

  • Fill a pot with water, bring to boil, and cook the rice according to the instruction on the package.
  • While waiting for the rice to be ready, wash the courgettes and soften them in a pan, with chopped onion, mint, salt and oil to taste.
  • Wash and steam the shrimp
  • When the rice is cooked, drain and pour it into the pan with the cooked courgette, add the shrimps and stir over a high heat for 3 minutes. Serve with a sprinkling of ground black pepper, if desired.
