Sun risotto

Ingredients
360g rice
4 tablespoons extra virgin olive oil
4 tablespoons parmesan cheese
1/2 onion
500g yellow pumpkin
1/2 glass of white wine
Salt to taste
Method
Cut the pumpkin into small cubes, chop the onions.
Heat the pan, and stir the chopped onion with the olive oil, then add the diced pumpkin and cook for about 5-10 minutes.
Add rice and let it toast.
Add white wine and allow it to evaporate.
Continue cooking by adding water or vegetable stock. When the rice is cooked, add the parmesan cheese.
To make it a single dish, add about 50-70g of soft cheese such as smoked scamorza or taleggio.
