Ingredients

  • 800g red onion
  • 150g breadcrubs
  • 60g extra virgin olive oil
  • 150ml (1 glass) vinegar
  • 3-4 bay leaves
  • Salt and green pepper to taste

Method

  • Wash the onions then slice them into thin slices
  • Place the sliced onions in boiling water for about 2 minutes together with the bay leaves. Drain them but not too much, then place them in a baking tin with oil, vinegar, bread crumbs, salt and green pepper. Add half a glass of water and place the tin in the oven at about 180-200°C for about twenty minutes.
  • Serve with bread croutons.
