Chicken breast with rice

Ingredients

  • 100g of diced chicken breast
  • 50g of basmati brown rice
  • 4 cardamom seeds
  • Juice of 1 lemon
  • 1 teaspoon of rosemary
  • 1 clove of garlic (minced)
  • 1 teaspoon of vinegar
  • 3 spoons of extra virgin olive oil

Method

  • Marinate the diced chicken for about an hour in a container with the lemon juice, rosemary, oil, minced garlic and vinegar.
  • Meanwhile, cook the rice (without salt) and add the cardamom seeds.
  • Cook the marinated chicken with its sauce in a covered pan (add water during cooking, if needed).
  • When the chicken is ready, add the rice. Mix well and serve.
