Ingredients

  • 360g rice
  • 4 tablespoons extra virgin olive oil
  • 4 tablespoons parmesan cheese
  • 1/2 onion
  • 500g yellow pumpkin
  • 1/2 glass of white wine
  • Salt to taste

Method

  • Cut the pumpkin into small cubes, chop the onions.
  • Heat the pan, and stir the chopped onion with the olive oil, then add the diced pumpkin and cook for about 5-10 minutes.
  • Add rice and let it toast.
  • Add white wine and allow it to evaporate. 
  • Continue cooking by adding water or vegetable stock. When the rice is cooked, add the parmesan cheese.
  • To make it a single dish, add about 50-70g of soft cheese such as smoked scamorza or taleggio.
